Starch gelatinisation
Starch gelatinisation is the fundamental physical change that thickens sauces, binds batters
and gives cooked grains their mouthfeel. When starch granules are heated in water, they
absorb liquid, swell and—once a critical temperature range is reached—lose crystalline
order. Amylose leaches out and amylopectin swells, increasing viscosity and forming a semirigid gel upon cooling.
Key variables are starch type, concentration, heating profile and shear. Potato and waxy
maize gelatinise at different temperatures and produce differing textures: potato often
gives a translucent, elastic gel, while wheat-derived starches can yield pastes that become
opaque. Rapid heating can cause uneven swelling and lumping; excessive shear can break
swollen granules and reduce viscosity. Acidic environments and high sugar concentrations
can delay or reduce gelatinisation because they interfere with water availability and
hydrogen-bonding. Improper cooling can leave a weak set or syneresis.
